The christening cake!!!!

Hello hello hello!

How is everyone!? I hope you all had a fabulous bank holiday weekend! We travelled down to Cornwall for a christening. Mr P was one of the god fathers..... And I was asked to make the cake... How could I say no!?

So over the last month I've been perfecting my maderia sponge cake, making sugar flowers and bears!!

I made the sponge in the week and took it to Cornwall at the weekend where it was iced on the Saturday morning and assembled before careful transportation (up hill, down dale and over cattle grids galore) and many choice words at Mr P to slow down around corners as the cake was in a box and on my lap!!!!!! I did turn into a "cake-zilla"!!!!!

I was proud as punch when I carried it out to the christening party on Sunday. I had lots of lovely comments and my friends loved it. Phew!!!!!

So, here are some photos for you to enjoy!!! Next cake challenge please!!!!

Lots of love, Nic xoxo

Going to work on a cake....

Hello folks!

I'd thought I'd take a breather and come up for air from the exciting Olympics and get started on some baking.... especially since the new series of The Great British Bake Off hits our screens tonight (oh yes, I will be glued to the TV).

I've been asked to bake a cake for Mr P's god-daughters' christening which is at the end of the month. What an honour! It also gives me a good excuse to whip up some practise cakes and play with sugar icing, making all kinds of cake toppers.

Decoration of the cake is top secret of course.... But I can tell you that the cake itself will consist of a two tier Madeira sponge cake, iced with decoration.... Photos of the finished article to follow at the end of the month!

So at the weekend I've whipped up a Madeira cake. It's good to practise considering that I am using a new oven. Best to get to know the tools of the trade and not leaving it to the week before!

The Madeira Sponge came out of the oven like a towering... erm... mass of sponginess.... It's at least 4inches high! The cake now resides at work full of buttercream and redcurrant jam for them to sample.
There have been lots of oohs and ahhs and yums coming from the offices so that's a winner!

That's a huge cake!

Playing with icing.... whilst trying not to eat it all.... apart from the broken ones of course!

So, last minute prep this weekend and finalising the decoration and then making the cakes next week ready to take to Cornwall! Fingers crossed it all goes well! I am very excited! I hope our friends like it!

I'll keep you posted!

Cheerio!
